Like most home cooks who are still working, I tend to cook the same sides over and over again, just to keep menu planning and cooking time to a minimum.

Seven-Minute Sides: Mild Curry Leaf Chutney

This curry leaf and cilantro chutney recipe comes from Vaidya Smita Naram.  She whipped up this lovely sauce in our Vitamix in about 5 minutes while recently staying in our home.  My husband, Tom, and I happily poured it over mung bean “burgers” I had made for dinner.  A few days later I prepared another cup of the chutney, which we used to top off savory chickpea pancakes that Dr. Smita showed me how to make a half-hour before we drove her to the airport for her flight home to Mumbai, India.

Chutneys are relishes or sauces that are staples in Indian cuisine. They are also used in Ayurvedic cooking when freshly made. There are innumerable kinds of chutneys — some chunky, others that are more like a paste, and liquid sauces.  Chutneys have a reputation for being amazingly hot to the tongue because most Indian cooks spike their chutneys with chilies. Not so with this recipe!  Authentic Ayurvedic cuisine avoids the use of chilies except for people who are predominantly kapha types. Nonetheless, this chutney is guaranteed to add a bolt of flavor to any dish along with potent healing power.

Impressive Vegan Entrées

Today, I present you with a recipe for Baked Spaghetti Squash with Chickpeas & Veggies. Now that you may be starting to dine again with a few friends on occasion or meeting up with family you haven’t seen in more than a year, you might want a dish that impresses them with the delights of vegan cuisine. This entrée will wow them—even If I do say so myself!

Admittedly, this stuffed squash is a bit of a project. There is nothing difficult about it, but it has several steps, so plan to make this when you have a couple hours to relax and enjoy cooking.

This recipe takes advantage of my recently posted Asparagus & Sweet Potato Side, which becomes the filling of the scooped-out spaghetti squash boat.

Healthy Comfort Food

Comfort food was definitely going to be on our table one night last week, when I was in a bit of a funk. These easy Gluten-Free Vegan Pancakes were calling my name!

Truth be told, I was in a funk after meeting my 93-year-old mother at the emergency room because she had gashed a leg during a fall. I dreaded being in a hospital ER during the Covid-19 outbreak here in North Carolina, but no way was I going to let her be in that situation alone. So, I went, wearing a mask and repeating my mantra. Ten days later, her leg is mending well and, happily, I’m still symptom free. I count both of us as among the lucky ones that day.

These are certainly perilous time we are living in. No one is immune from the cascading impact of Covid-19, and this is a time for us to be kind to ourselves. I am not suggesting that we stuff our feelings with comfort food. Not at all. I am, however, acknowledging that, besides providing sustenance, food brings us comfort. And, I’m using this recipe today to demonstrate at least one way to succumb to your comfort food cravings deliciously—without undermining your precious health.

Ahh…Sweet Corn!

“As American as apple pie” is the turn of phrase for most anything associated with U.S. culture, but really—if you’re counting by the pound—corn is king! For that reason, and because it’s summer when sweet corn is fresh in local farmers’ markets or ready to pick in your garden, I will offer an easy and delicious vegan corn dish.

 

I’m not talking about just any corn. I’m talking about sweet corn, the delicious corn you can eat on the cob and that, when it’s just been picked or is still reasonably fresh, almost melts in your mouth with natural sweetness.
