Healthy Comfort Food 2023 Spring Edition: Gluten-Free Vegan Pot Pie

With family coming home this week for holidays and spring breaks, itā€™s a perfect time to make a deliciousā€”if perfectly imperfectā€” Vegan Gluten-Free Pot Pie. No doubt, this dish is a project if you make your own crust, so working folks will want to save it for the weekend unless you make the crust the day before and refrigerate it.

I call it perfectly imperfect because I am not a pie crust aficionado. Although my mother was an excellent (and revered) math teacher, she was not a baker, so I never learned to make pie crusts by her side. My friend and baking mentor, Martina Straub, helped me perfect a spelt crust many years ago when I was hoping that low-gluten goodies were good enough to support my health. But alas! I needed to go 100 percent gluten-free to heal my gut and related inflammatory conditions.

Healthy Comfort Food

Comfort food was definitely going to be on our table one night last week, when I was in a bit of a funk. These easy Gluten-Free Vegan Pancakes were calling my name!

Truth be told, I was in a funk after meeting my 93-year-old mother at the emergency room because she had gashed a leg during a fall. I dreaded being in a hospital ER during the Covid-19 outbreak here in North Carolina, but no way was I going to let her be in that situation alone. So, I went, wearing a mask and repeating my mantra. Ten days later, her leg is mending well and, happily, Iā€™m still symptom free. I count both of us as among the lucky ones that day.

These are certainly perilous time we are living in. No one is immune from the cascading impact of Covid-19, and this is a time for us to be kind to ourselves. I am not suggesting that we stuff our feelings with comfort food. Not at all. I am, however, acknowledging that, besides providing sustenance, food brings us comfort. And, Iā€™m using this recipe today to demonstrate at least one way to succumb to your comfort food cravings deliciouslyā€”without undermining your precious health.

Donā€™t panic. Be smart. Stay vigilant.Ā

Dear Ones,

If youā€™re walking around with a pervasive feeling of concern or fear about COVID-19, I hope you’ll take a few minutes to review the tips Iā€™m sharing today for protecting your health and the health of your loved ones. I havenā€™t seen many of these recommendations promoted by the media, government officials, and the dozens of blogs now streaming into my inbox.

Please understand, I am not hitting the panic button. Although there is legitimate cause for concern about the coronavirus, there are many ways to boost your immune systemā€”including the way you manage your food and your use of effective botanical medicines.

Do follow all the CDC guidelines and stay current with their updates. Following these disciplines is the smart thing to do, and the simple act of doing so will help you stay centered. You canā€™t be too vigilant about washing hands thoroughly and often. Be intelligent about social distancing. Beyond this, we all need to eat, and since thatā€™s my passion, let me add my two cents about how to stay safe when it comes to food.

Sweet Potato Latkes for the Season of Light

When we were children, my brother and I looked forward to Hanukkah with great anticipation. The excitement was all about opening gifts, because Hanukkah had become the gift-giving time of year for modern Jewish familiesā€”likely because, falling as it did sometime in December, this Jewish holiday always had proximity on the calendar to Christmas. Rick recalls sneaking into the den closet to examine the wrapped presents hidden there. I fondly remember the Hanukkah when I was given my first

Bring on the Dark Chocolate for Valentine’s Day!

If you love dark chocolate and want to splurge a little for Valentineā€™s Day, do I have a treat for you and your belovedā€”perhaps the fudgiest brownies youā€™ve ever tasted! From a health perspective, the good news is that these are not outrageously sweet compared to standard fare, even though Iā€™m told they are sufficiently decadent to stir the passions of any chocolate lover.

First, let me acknowledge what may be obvious to many readers: chocolate, fudge, and brownies are not part of ancient Ayurvedic cuisine. Nonetheless, I believe in adding some flexibility to my offerings so thatĀ people exploring Ayurveda donā€™t feel constrained by too much austerity. As one of my Ayurvedic mentors often says,

Nature’s Tune-Up

I have an important question for you today.

Would you let your car go for years on end without taking it in for service? Probably not! When it runs on old dirty oil, the engine becomes less effectiveā€”your car can break down.

The truth is, it’s no different for your body.

That’s why we created the 21-Day Delicious Detox Challenge! And you’re invited to participate in this spring 2022 online home detox course, which begins on March 22.

Did I hear you say “ugh”? I get it! I used to feel that way about the word myself.

An Elegant Vegan Christmas

If youā€™re a vegan or vegetarian cook who wants to dazzle your holiday guests with an exciting new dish, I have a couple of delicious options for you today: Savory Vegetable Rolls or their variation, Root Vegetable Casserole. I started experimenting last week to create something interesting for our first dinner guests since the beginning of the pandemic. We had all decided having dinner together was worth the small inconvenience ofā€”oy vey!ā€”taking rapid Covid tests. It was, and this entrĆ©e was a major hit!

Todayā€™s recipe options demonstrate how you can play with a basic recipe and create a dish that suits your palate and time constraints. For example, you can also create this dish as a layered casserole, which will be easier and faster than making the rolls. The rolls are not difficult, but they do require extra steps.

Start a Fresh New Year with Delicious Vegan Foodā€”Even if Youā€™re an Omnivore!

Have you been eating a lot of heavy foods throughout the holidays? Itā€™s no surprise if youā€™ve been cooking traditional roasted meats, cheesy comfort foods, and artisanal breads for your family. Oh, and we havenā€™t even gotten to all those sugary cookies you ate while making batches of baked goods for colleagues, teachers, and friends! Even vegans and vegetarians may suffer after a long season of overeating favorite comfort foods.

If youā€™re feeling lethargic or bloated after New Yearā€™s Eve, itā€™s no wonder! Your body is likely signaling itā€™s ready for a break. May I suggest that you make a fresh start on New Yearā€™s Day with a lighter, yet totally satisfying, dish for your familyā€”Hearty Lentil Stew.

Thanksgiving Sides Your Guests Will Never Forget!

For vegetarians and vegans, Thanksgiving is all about the traditional mouth-watering side dishes, and of course, Iā€™m all about making them as healthy as they are delicious!

Today Iā€™ll point to all of my favorite holiday sides and introduce you to a new recipe: Reimagined Green Bean Casserole.

When I was young, in the ā€™50s and ā€™60s, cooking for convenience was all the rage, and there was no cornucopia of fresh vegetables readily available in grocery stores. I canā€™t fault my mother for her frozen spinach with canned mushroom soupā€”though just the thought of it now makes me cringe! Even then, I had no taste for such food. I learned to love vegetables only when I began cooking with my college roommate, Ellen Brock, who grew up picking fresh veggies out of her motherā€™s garden.

But there was nothing wrong with the idea behind my in-laws’ green bean casserole with canned mushroom soup and canned onion rings. The potential is there for a great dish. I invite you to expand your culinary imagination with this recipe.

This Reimagined Green Bean Casserole is a vegan and gluten-free dish made with fresh ingredients: green beans, caramelized onions, fresh almond milk (if available), fresh ginger, and shiitake mushrooms

Dressing Up Humble Red Cabbage

I usually have a plan for dinner. After all, I’m a Virgo with four planets in Virgo. We tend to details. But I didn’t have a plan last night, and when I got home at 6 p.m., ready to hunker down for a Carolina ice storm, what I really wanted to do was work out before cooking. So I quickly wrapped up some sweet potatoes and put them in the oven to bake, postponing my thoughts about the rest of the menu. Thirty minutes later I was finally ready to cook, but my menu was still an empty page.

As resourceful (or sometimes desperate) cooks often do, I opened the refrigerator door looking for inspiration.Ā  The red cabbage that had been ignored for a few days was calling my name. My first thought was to make a quick stir-fry, using cabbage as the focus since I
