Gluten-Free Peach Cobbler Makes Summer Complete

Summer holds many joys but few are as divinely delicious as ripe southern peaches in a peach cobbler. Peach pie is also a special delight, but cobbler is so much simpler to make.

Peach cobbler is not such a far cry from traditional Ayurvedic cuisine as you might think. As with all food in the Ayurvedic model, cooked fruit is preferred to raw. And I make this dish with unrefined sugar, as do traditional Ayurvedic cooks when making sweets.

If you dine in the South during the summer months, you’ll find peaches on display at breakfast, lunch, and dinner! Peaches on granola with fresh almond milk at our house…yum! Peach jam on toast, peach parfaits, peach ice cream. Peach soup, peach salsa, and peach daiquiris. Yes, I could go on!

As July 4th approaches, and as you plan party and picnic menus all summer long, a peach cobbler (topped with some vanilla ice cream) is 100 percent sure to please!

  1. This looks wonderful! I wonder if you could substitute coconut cream for coconut sugar. Thanks for the summer dessert idea!

      Interesting idea! You could certainly try it, but the texture of the dish will change for sure as the cream is oily, and I wouldn’t think it is as sweet. You might try cutting back on the sugar first. And if you do make it with the coconut cream, please let readers know how it turns out!

    Thanks, Lisa! This looks delicious and I’m going to try it. Just a comment: I’ve been making peach pies for YEARS … I never peel the peaches and they’re delicious. Also, this is a vegan dish and I’ve got lots of young friends that are now vegan. Might be a thought to tag all your dishes that are vegan. xoxoxo

      Thanks for the tip, Candice! I would definitely try that with organic peaches and from a grove that doesn’t use pesticides. Most of the Carolina orchards are sprayed heavily.

      You’re right: This is a vegan recipe if the cook opts for coconut oil. I’ll be more proactive about labeling the vegan dishes. Most of my recipes offer a vegan option. I usually cook with ghee, an Ayurvedic favorite, but offer an oil for vegan preference.
